Chocolate Mint Cookies
These cookies were yummy! They were given the thumbs up by everyone in my family, so I would definitely make them again. They recipe called for decorating them with the chocolate drizzle, but I happened to have crushed candy canes on hand so I thought I'd try that as well. I like how they both turned out equally well.
1 cup sugar
1/2 cup butter, softened
1 teaspoon vanilla
1 egg
2 squares (one ounce each) unsweetened chocolate, melted and cooled
1 cup flour
1/2 teaspoon salt
Peppermint Frosting
2 1/2 cups powdered sugar
1/4 cup butter, softened
3 tablespoons milk
1/2 teaspoon peppermint extract
Chocolate Glaze
1/4 cup butter
2 tablespoons corn syrup
6 ounces semisweet chocolate chips
Heat oven to 375. Mix sugar, butter, vanilla, egg and unsweetened chocolate. Stir in flour and salt. The dough is extremely soft, so I rolled them in sugar before I dropped the dough by rounded teaspoonsfuls about 2 inches apart onto ungreased cookie sheet. Flatten each cookie with greased bottom of glass dipped in sugar. Bake until set, about 8 minutes. Cool on cookie sheet for a few minutes before transferring to a wire rack. Once cool, frost with Peppermint Frosting and then drizzle with chocolate glaze.
